Tunnel pasteurization is the process of taking liquid-filled cans or bottles and running them through a stainless steel tunnel where hot water is sprayed onto the finished product. Tunnel pasteurizers is effective methods for pasteurizing liquids. 
With tunnel pasteurization, the liquid is poured into bottles and cans, and then the bottles or cans are moved into an enclosed conveyor. Once in the conveyor, they're sprayed with, or immersed in, hot water or steam to 74-90 degrees Celsius. After the heat bath, the bottles or cans are then sprayed with cold water to cool them down.
The use of sprays, rather than baths of liquid, allows for a more precise control of the heating and cooling stages. The nozzles serve to greatly increase the surface area of the liquid and increase heat transfer. This means less energy is wasted and the efficiency of the system is improved.


Working Principle:
In a certain temperature range, the lower the temperature, the slower the bacteria propagate; the higher the temperature, the faster the bacteria propagate (generally, the suitable temperature for microbial growth is 28 ºC - 37 ºC). But if the temperature is too high, the bacteria will die. Different bacteria have different growth temperature, and the ability of heat and cold tolerance. 

Pasteurization uses the pathogen has the characteristics of not very heat-resistant, with appropriate temperature and holding time treatment, to kill all of them. However, after pasteurization, a small number of harmless or beneficial, heat-resistant bacteria or bacterial spores remained.


Technological process:
In the food, beverage, pharmaceutical industries, the packaged products(Bottled or canned)are placed on the conveyor belt and transported into the sterilization tank. The products should be spray by the hot water from top and bottom which can kill the bacteria inside the food materials. After a certain time, the food materials are deliveried into the cold water for cooling and lower
the temperature within the required time.
