Definition Of Quick Freezing:
Quick freezing is a kind of freezing technology in which the pre-treated food or other materials are placed in the freezer and passes through the maximum ice crystal formation zone within 30 minutes. The diameter of ice crystal formed is less than 100 um, and the center temperature of the frozen food must reach below - 18 ºC.
Working Principle:
After the fresh materials(fish, meat, vegetables or fruits, etc.) are fed into the equipment, quickly lower the temperature below - 120 ºC (it can be adjusted according to different materials), and then make the materials quickly frozen within 2-15 minutes, this can effectively avoid the ice crystal formation period inside the materials, so can protect the cell membrane from being damaged, and avoid the nutrients lost then remains the original flavor, taste and nutritional value, even better than fresh materials in taste.
